This in one that took me a few attempts to make the way I wanted, Pork Fried Rice. I based it on a recipe I found online, but made a few minor changes to make it more to my liking. I also adjusted it to items I usually carry with me.

 

Ingredients

1/2 Cup Instant Rice
1/2 Cup Water
Vegetable Oil
1 Egg
1/4 Small White Onion
2 oz Pork
Ah-So Chinese Sauce
1 Libby’s Individual Cup Carrots
1 Libby’s Individual Cup Peas
2 Teaspoons Soy Sauce
1 Teaspoon Toasted Sesame Oil
Ginger
Garlic

Instructions

  1. Following the package directions on the rice, boil the water and make the rice. Set it aside.  It would be even better to make it several hours earlier and refrigerate it if possible.
  2. Dice the onion and pork.
  3. Add a little vegetable oil to a skillet. Heat it up, then scramble and cook the egg. Set the egg aside in a dish
  4. put the onion and pork in the skillet.  Add enough Ah-So Chinese sauce to coat the pork.
  5. Once the pork in fully cooked, add the rice and stir it in.
  6. Drain the water from the individual cupped carrots and peas, then add them to the skillet and stir them in.
  7. Add the soy sauce, garlic to taste, a pinch of ginger, and the toasted sesame oil. Add the scrambled egg back in, Stir until everything is hot.
  8. Serve and Enjoy
