One of my favorite meals to make while solo camping is American Chop Suey (and in some areas known as Goulash).  This is one I like to make often.

Ingredients

1/4 Pound Ground Beef
1 oz Chopped Green Pepper
1 oz Chopped White Onion
Black Pepper to taste
Dash Garlic Powder
Dash Italian Seasoning
Dash Paprika
1/4 Cup Pizza Sauce
1/4 Cup Elbow Macaroni
Water (enough to boil macaroni)
1 oz Ketchup
Dash Soy Sauce
Grated Cheddar Cheese

Instructions

  1. Heat up a pan with a little oil. Add the ground beef
  2. Dice the pepper and onion, add to the ground beef. Cook until the beef is browned
  3. Stir in the black pepper, garlic powder, Italian seasoning, and Paprika. Let simmer for a couple minutes
  4. Stir in the pizza sauce, Ketchup, Soy Sauce, and some of the cheddar cheese. Let simmer until heated
  5. If you’re using a single burner stove, set aside the sauce pan. In another pot, bring water to a boil. If using a two burner stove, you can start the water boiling when you start cooking the beef.
  6. Boil the pasta in the water until done to your liking, then strain
  7. Add the pasta to the sauce, and reheat if necessary
  8. Move to a bowl (or eat directly from the pan if you want). Sprinkle a little more cheddar on top while it’s still hot, so it melts in. Enjoy!

I got this recipe from “Salad In A Jar” at this link.  I made some changes to it for my liking, changed the serving size to just one person, and to match ingredients I usually have in my van.
